Low-carbohydrate diets or low-carb diets are dietary programs that restrict carbohydrate consumption usually for weight control or for the treatment of obesity. Foods high in digestible carbohydrates (e.g. bread, pasta) are limited or replaced with foods containing a higher percentage of proteins and fats (e.g., meat, poultry, fish, shellfish, eggs, cheese, nuts, seeds, peanuts, and soy products) and other foods low in carbohydrates (e.g., most salad vegetables) although other vegetables and fruits (especially berries) are often allowed. The amount allowed of these foods varies with different low-carbohydrate diets.
Such diets are sometimes ketogenic (i.e. they restrict carbohydrate intake sufficiently to cause ketosis) for example, the induction phase of the Atkins diet.[1][2][3] Some sources, though, consider less restrictive variants to be low-carbohydrate as well.[4]
Apart from obesity, low-carbohydrate diets are often used as treatments for some other conditions, most notably diabetes[5][6][7] and epilepsy,[8][9][10] but also for chronic fatigue syndrome (see ketosis) and polycystic ovarian syndrome.

* 1 head cauliflower, separated into small florets
* 1 large roasted red pepper (homemade or jarred), rinsed and patted dry

* 2 tablespoons chopped parsley
* Salt and pepper
Not only do red peppers add color and flavor, they provide a dose of beta-carotene, a powerful antioxidant.
Directions:
1. Bring a medium saucepan of lightly salted water to a boil. Cook cauliflower 6-7 minutes until tender but firm. While cauliflower is cooking, cut red pepper into thin strips.
2. Drain cauliflower. Mix in red peppers, olives, olive oil and parsley. Season to taste with salt and pepper.
